Baby's First Green Smoothie Recipe

This smoothie gets its gorgeous hue from potassium-rich cucumbers and from collard greens, which are full of bone-strengthening minerals like calcium and vitamin K. Immune-boosting apples lend sweetness to the smoothie while adding both soluble and insoluble fibres that are helpful for supporting healthy digestion. Adapted from Nourishing Meals: Healthy Gluten-Free Recipes for the Whole Family by Alissa Segersten, this delightfully green smoothie is meant for older babies around the 8.5 to 10-month mark.

Baby food bonus: Leftover smoothie can be frozen in popsicle moulds to make fantastic teething pops. Or add a frozen banana, half of an avocado, cocoa powder or vanilla, and some additional liquid, for a smoothie or summertime frozen snack the whole family will love!

Ingredients

  • 1 medium apple, cored
  • 1 small cucumber, peeled
  • 2 large collard leaves
  • 1 cup water

Instructions

  1. Add ingredients to a high-powered blender and blend for a minute until very smooth.
  2. Serve immediately or pour into a glass jar and store in refrigerator for up to 2 days. Alternately, freeze in popsicle moulds for up to a month.
