Fertility-Friendly Coconut Crunch Granola

A great option for breakfast or your mid-day snack

The following recipe is adapted from IVF Meal Plan (Cherevaty 2019).5

Paired with Greek yogurt or fruit compote, this grain-free granola makes a fertility-friendly breakfast or snack that is rich in omega-3s, protein, minerals, and fibre.

 

Ingredients

  • 1½ c unsweetened shredded coconut
  • ¾ c sliced almonds
  • ½ c raw pumpkin seeds
  • ½ c raw sunflower seeds
  • 1 Tbsp chia seeds
  • 1 Tbsp flax seed
  • ½ tsp cinnamon
  • ½ tsp sea salt
  • ¼ c melted coconut oil
  • ¼ c honey
  • ½ tsp natural vanilla extract 

 

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine coconut, pumpkin, sunflower seeds, walnuts, chia seeds, flaxseed, sea salt, and cinnamon. Set aside.
  3. In a small bowl, whisk together coconut oil, maple syrup, and vanilla to combine.
  4. Add wet ingredients to dry ingredients and stir to evenly combine.
  5. Spread the mixture evenly on parchment-lined baking sheet.
  6. Bake for about 20 minutes, checking every 5 minutes to ensure the mixture is drying but not overly browning or burning.
  7. When the mixture is baked, remove the baking sheet from the oven and allow it to cool for 10 minutes.
  8. Break the mixture into chunks and allow it to continue to cool and dry at room temperature. When fully dry, store in an airtight container in a cool place away from sunlight.

Makes about 4 cups.
