The following recipe is adapted from IVF Meal Plan (Cherevaty 2019).5
Paired with Greek yogurt or fruit compote, this grain-free granola makes a fertility-friendly breakfast or snack that is rich in omega-3s, protein, minerals, and fibre.
Ingredients
- 1½ c unsweetened shredded coconut
- ¾ c sliced almonds
- ½ c raw pumpkin seeds
- ½ c raw sunflower seeds
- 1 Tbsp chia seeds
- 1 Tbsp flax seed
- ½ tsp cinnamon
- ½ tsp sea salt
- ¼ c melted coconut oil
- ¼ c honey
- ½ tsp natural vanilla extract
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a large bowl, combine coconut, pumpkin, sunflower seeds, walnuts, chia seeds, flaxseed, sea salt, and cinnamon. Set aside.
- In a small bowl, whisk together coconut oil, maple syrup, and vanilla to combine.
- Add wet ingredients to dry ingredients and stir to evenly combine.
- Spread the mixture evenly on parchment-lined baking sheet.
- Bake for about 20 minutes, checking every 5 minutes to ensure the mixture is drying but not overly browning or burning.
- When the mixture is baked, remove the baking sheet from the oven and allow it to cool for 10 minutes.
- Break the mixture into chunks and allow it to continue to cool and dry at room temperature. When fully dry, store in an airtight container in a cool place away from sunlight.
