Chia is one of my favourite summer superfoods. When soaked in water, chia seeds create a mucilaginous outer layer which is fabulous for clearing out the digestive tract since it carries water and fibre through the intestines. Mucilaginous foods like chia seeds, seaweed, and oats are considered “cooling” in Ayurvedic and Traditional Chinese medicine, making them a great addition to your summer meal planning.
Easy Chia Lemonade

Ingredients

1 L filtered water
- 3 tbsp white chia seeds
- 1 tbsp maple syrup or honey
- juice from 1 lemon
Instructions
Add all ingredients to a large mason jar, mix well and let sit for 20 minutes to allow chia seeds to absorb water.
