Carrot cake is a popular favorite around springtime, often serving as a centrepiece on Easter or Mother’s Day tables. However much we may love this classic dessert, we certainly don’t love the refined sugar that tends to make its way into many traditional recipes. This healthier recipe incorporates organic maple syrup for an earthy sweetness, and also includes walnuts, flaxseeds, and 3 cups of carrots, balancing out sweetness with substance. No flavor sacrificed.
Ingredients
- 1 c EDEN Safflower Oil
- 3/4 c organic maple syrup
- 1 1/2 c Vanilla EDENSOY
- 4 Tbsp flax seeds, ground in a coffee grinder
- 4 c organic unbleached white flour
- 2 tsp non-aluminum baking powder
- 2 tsp baking soda
- 1 tsp EDEN Sea Salt
- 1 1/2 tsp EDEN Ground Cinnamon
- 1/2 tsp ground allspice
- 3 c coarsely grated raw carrots
- 1 c walnuts, chopped
- 1/2 c Thompson Organic Seedless Raisins
Instructions
Preheat oven to 350°. Blend oil, maple syrup, flax seed, and EDENSOY. Sift flour with baking powder and soda. Add remaining ingredients. Mix well, add wet ingredients to dry and stir well. Lightly oil and dust with flour, a 9" x 13" cake pan. Bake for 35 to 40 minutes.
