The following recipe is adapted from IVF Meal Plan (Cherevaty 2019).5
Berries are anti-aging powerhouses that have a lower impact on blood sugar than other fruits. This recipe has a boost of protein from collagen.
Ingredients
- ½ lb frozen blueberries
- ½ lb frozen strawberries
- Zest and juice of ½ lemon or orange, divided
- ¼ c water
- ¼ c maple syrup
- 2 Tbsp collagen powder (optional)
- 1 tsp pure vanilla extract
Instructions
- In a medium pot over low–medium heat, combine the blueberries, strawberries, citrus juice, water, maple syrup, and collagen powder.
- Bring the mixture to a simmer and cook for 20 minutes, stirring occasionally.
- Remove from heat. Stir in the vanilla extract and citrus zest.
- Divide into portions and serve warm, or store in the refrigerator for up to 5 days.
