Berry Bliss Compote

The following recipe is adapted from IVF Meal Plan (Cherevaty 2019).5

Berries are anti-aging powerhouses that have a lower impact on blood sugar than other fruits. This recipe has a boost of protein from collagen.

 

Ingredients

  • ½ lb frozen blueberries
  • ½ lb frozen strawberries
  • Zest and juice of ½ lemon or orange, divided
  • ¼ c water
  • ¼ c maple syrup
  • 2 Tbsp collagen powder (optional)
  • 1 tsp pure vanilla extract

Instructions

  1. In a medium pot over low–medium heat, combine the blueberries, strawberries, citrus juice, water, maple syrup, and collagen powder.
  2. Bring the mixture to a simmer and cook for 20 minutes, stirring occasionally.
  3. Remove from heat. Stir in the vanilla extract and citrus zest.
  4. Divide into portions and serve warm, or store in the refrigerator for up to 5 days.
